Starting to get into jazz rock and fusion more lately. Not familiar with Al's music at all. 

What are the tunes to start with?

I always loved Al Di Meola's stuff. There's a lot of really great tunes. Some I'd recommend

Mediterranean Sundance
Race with devil on spanish highway (or the version he did with Steve Vai titled Race with Devil on Turkish Highway)
The albums Casino, Elegant Gypsy, Electric Rendezvous and Kiss my Axe were all great.

Haven't heard much of his newer stuff though.

(Come to think of it.. I have the DiMarzio Al Di Meola signature pickup somewhere at home too)

Love Al's stuff, he's been doing videos from home on facebook during the stay at home thing, definitely worth checking out. 

And best place to start with his music IMHO is the Elegant Gypsy album, pretty much what Budd posted. 

And yes, his technical prowess is amazing.
